Hong Kong, November 2007 - Swirls of margaritas in the dust bowls of the Rio Grande? Visions of the Alamo? Swirling maracas and the charms of a Mexican cantina in Kowloon? You’re heading in the right direction, as Café Rendezvous at InterContinental Grand Stanford offers an authentic taste of Tex Mex cuisine by the lights of Victoria Harbour throughout November.

Tex-Mex is a cuisine that actually originated with the Tejanos as a hybrid of Spanish and a native Mexican foods when Texas was part of New Spain and later Mexico. Food historians also tell us TexMex cuisine originated hundreds of years ago when Spanish/ Mexican recipes combined with Anglo fare.

Native Americans contribution also made a significant to Tex-Mex include pecans, pinto beans, nopales, wild onions, mesquite flour and agarita berries. Further waves of immigrants from the Canary Islands brought a Berber influence to Texan food including large amounts of cumin, chillis and coriander (cilantro) – creating the distinctive Tex-Mex signature flavours of today.

The ingredients used are also common in Mexican cuisine, although ingredients unknown in Mexico are often added. Tex-Mex cuisine is characterised by heavy use of meat (particularly beef), beans, and spices. Nachos, crispy chalupos, chili con queso, chile con carne and fajitas are all Tex-Mex inventions. Serving chips and a hot salsa as an appetiser is also an original Tex-Mex combination.
