Hong Kong, April 2006 - Belvedere Restaurant & Wine Bar will welcome the esteemed Kevin Mitchell, winemaker and owner, of the multiple award-winning Kilikanoon Wines in the Clare Valley, Australia, for an exclusive wine dinner on Thursday, 20th April, 2006.
Chef David has designed a special 8-course menu including Crispy Tasmanian oysters with Parmesan foam and shaved fresh summer truffles; Twice-cooked Bangalow pork belly with prawn colcannon, chilli - caramel and orange reduction roasted baby root vegetables. Winemaker Kevin Mitchell will showcase a selection of paired wines including the Kilikanoon Morts Block Riesling 2004 which has an intense lime flavor and vivid acidity; and the Kilikanoon Killerman's Run Shiraz 2002 which is aromatic, spicy, plummy and chocolatey!
Kilikanoon Wines has achieved a 5-star rating in James Halliday's "2005 Companion" and they were named in the top 10 New Up and Coming Australian producers in the 2005 Tom Stevenson Wine Report. The renowned and respected Robert Parker has described the winery as "one of the most brilliantly run wineries in Australia, and the quality of the entire portfolio is impressive thanks to the enviable talents of winemaker Kevin Mitchell."
The Kilikanoon Wine Dinner is just HK$688* per person, including cocktail reception at 7pm and followed by 8-course dinner with paired wines.

Hong Kong, April 2006 - Going Gourmet with White Asparagus in April and May!
The Mistral and Belvedere Restaurant & Wine Bar will celebrate the arrival of spring and the first Italian and German Asparagus of the season.
This universally popular vegetable is one of the lily family's cultivated forms. The celebrated ivory-white asparagus is grown underground to prevent it from becoming green and is mild and nutty in taste.
Italian White Asparagus from Bassano at The Mistral in April:
In Italy, Bassano is the revered home of the Italian white asparagus! White asparagus has been harvested in the area for 500 years, and a rich heritage of wonderful cuisine has been created around the annual Asparagus Festival. To celebrate the season of white asparagus, The Mistral will feature a number of dishes with jet-fresh Bassano asparagus. Enjoy the delicious White asparagus served with black truffle vinaigrette and Parma ham; White and green asparagus risotto with grouper ragout; and Almond sorbet with white asparagus and extra virgin olive oil.
German White Asparagus at Belvedere Restaurant & Wine Bar in May:
The official German asparagus season or "Spargelzeit" begins with the harvesting of the first crop along the "Asparagus Road" which passes through the towns of Schwetzingen, Karlsruhe and Rastatt. Chef David will be preparing a number of contemporary Australian favourites with jet-fresh white asparagus from Germany! Try the Pan-seared Norwegian scallops with white asparagus and Champagne risotto or the White asparagus glazed with Hollandaise sauce, served with cooked bone ham and Parma ham.

Hong Kong, April 2006 - The legend of "The Three Kingdoms", a masterpiece of Chinese literature set in the waning days of the Han Dynasty, chronicles the lives of the feudal lords who tried to either replace the empire or restore it. The story introduces a rich tapestry of personalities but focuses on 3 families who would eventually carve out the 3 kingdoms from the remnants of the Han Dynasty, resulting in civil strife that lasts nearly a century. The complex plot tells of bravery, fidelity and indeed treachery and love, which ultimately result in a united country under one rule, the Jin Dynasty.
During the month of April, Chef Leung at Hoi King Heen will weave the legendary characters and the complex story plot into his dishes as he pays tribute to this famous novel. Dishes such as Deep-fried snow crab wrapped with sliced winter melon served in a bed of asparagus, Scallops skewer with deep-fried vermicelli served in a papaya boat and Deep-fried chicken balls with sweet prune sauce.
"I studied the writings of "The Three Kingdoms" in great depth and it has truly been a fascinating and rewarding journey for me to transform this source of knowledge into a selection of dishes that honour a time and a story long passed but not forgotten," comments Chef Leung.
