Hong Kong, February 2005 - Chef Darrell at Belvedere has decided to create a special menu featuring duck dishes with a twist! Some of the recipes even date back to the 15th and 16th century.
Throughout the month of February the duck menu will highlight the many ways in which guests can enjoy delicious and tasty duck, very diverse in flavour and aroma. From the rustic flavours of duck terrine to the deliciously crispy texture and taste of roasted duck, or the sweetness of duck with fruit....plus many more!
Chef Darrell will prepare delightful duck dishes such as Terrine of duck confit with pistachios and lollo rosso salad; Coffee-glazed Muscovy duck breast with a warm buckwheat and spinach salad with shimeji mushrooms and Roasted sweet potato and galangal soup with shredded Peking duck and white truffle essence.

Hong Kong, February 2005 – Chef Leung will be celebrating the arrival of the year of the Rooster with a menu entirely dedicated to the very best of Chinese cuisine.
Throughout the month of February Chef Leung will be preparing all the traditional favourites including Chilled shredded lobster with bamboo, carrot and eggs; Braised Shanghainese pudding with Alaskan crab meat; Stir-fried diced beef with garlic served in pumpkin boat and Stir-fried garoupa and cucumber in a winter melon. In addition to this, Hoi King Heen will feature Chef Leung’s tempting and tasty “Spring Dinner” set menus start at just HK$4,388.00 for a table of twelve!
On 10th February, the auspicious second day of the Chinese New Year holiday, there will be a colourful and lively traditional Lion Dance in the hotel lobby, and a God of Fortune will be distributing Lai See packets containing lucky gold coins during 9th to 11th February. Between 29th January and 7th February, each table dining at Hoi King Heen will receive a pair of “fei chun” (lucky messages) from a special Chinese calligrapher during dinner.

Hong Kong, February 2005 – Chef Antonio at The Mistral hails from the fascinating and fabulous region of Puglia, and throughout the month of February he will present some of his favourite dishes from home!
Puglia, or Apulia as it is often called in English, is "the heel" of the Italian boot, and is renowned for its great food and untold beauty, such as the stunning rocky spur of the Gargano Peninsula that projects out into the sea.
With eight hundred kilometers of coastline facing the wonderfully beautiful Adriatic sea, Pugliese cuisine is based on olive oil, and authenticity. Famous for its artisanal olive oil and seafood, Chef Antonio will be cooking up the very best of Puglia!
Chef Antonio recommends Steamed ciabatta with yellow fava beans, savoy cabbage, potatoes and deep-fried garlic or Sea bream in a casserole with olives, capers, cherry tomatoes, basil and small caponata vegetables and Rolled beef with parsley and pecorino cheese braised in a tomato sauce served with “cicatelli” pasta.
