“Shellfish Fiesta” at Café Rendezvous

The fiesta begins with Boston Lobster, Razor Clams and Manila Clams; Sautéed mussels in white wine sauce; Sautéed clams with black bean sauce; Roasted Canadian crab claw; Steamed baby scallops with garlic and vermicelli; Charcoal grill king prawns to name just a few.

Buddha Jumps Over The Wall

Hong Kong, 8th October 2004 – “Fo Tiao Qiang” or “Buddha Jumps Over The Wall” is an exclusive tonic dish that originates from Fujian province. Chef Leung of Hoi King Heen has decided to step into history and legend to recreate the traditional concealed urn dish from ancient recipes.

According to legend there was a Minister who held a dinner party in his garden, then next day his chef decided to cook all the leftovers from land and sea in a concealed urn pot. Wind blew the delicious smell into the backyard of a temple, and one of the monks was so tempted by the wonderful aromas that he jumped over the wall to sample the dish. When the monk asked the name of the dish, the crafty cook came up with “Buddha Jumps Over the Wall”.

“Buddha Jumps Over The Wall” has evolved over the years to include wonderful ingredients such as Sharks Fin, Fish Maw, Sea Cucumber, Abalone, Conpoy, Chinese Mushrooms and herbs.

Guests can enjoy Chef Leung’s Double-boiled Buddha jumps over the monastery wall with Chinese herbs, Braised Buddha jumps over the monastery wall in a casserole and Braised vegetarian Buddha jumps over the monastery wall.

An Italian Festival at The Mistral
Chef – Winemaker – Artist

Chef Antonio at The Mistral will welcome some of Italy’s finest artisans to InterContinental Grand Stanford Hong Kong from 29th October to 6th November, 2004.

Chef Luigi Sarsano from the 5-star Hotel “Cristallo” in Cortina d’ Ampezzo. The celebrated Chef Sarsano hails from the Basilicata region of Southern Italy, which is famous for its authentic sun-drenched Mediterannean cuisine. He will be preparing some of his signature dishes featured at the Cristallo’s gourmet restaurant which will take you on a culinary journey from Sudtirol (N. Italy) to Sicily.

Winemaker Dr Giuseppe Milazzo from “Azienda Agricola G. Milazzo Vineyards” in Sicily has been ranked as one of the top wine producers in Italy. Dr Milazzo’s wines have garnered numerous distinctions over the years, including a Gold medal at Bordeaux for the “Challenge International du Vin”. Situated in the hills to the North-East of Campobello di Licata in the province of Arigento, Sicily, this winery has been producing quality wines for the last 150 years. The 75 acres of vineyards are meticulously cared for and each and every vine is hand pruned and harvested to ensure a perfect grape for a delicious wine! Enjoy some of Dr Milazzo’s favourite wines during the Italian Festival – Maria Costanza Bianco 2003, Selezione di Famiglia 2002 and Red Wines such as Maria Costanza Rosso 1997, 1998 and 1999, Duca di Mantalbo 1998. The evening would not be the same without some sparkle – Sparkling Wines - Terre Baronia Grand Cuvée.

Artist: Barone Gianni Pennisi, born in 1924 and now living in Naxos, has studied under the famous maestro Francesco Mancini, and is member of the "Avanguardia Europea" Group with Arman, Aubertin, Beuys, De Cree and Sarenco. Barone Pennisi has given lectures and art courses in the Art School of Ubud in Bali, and his works are exhibited all over the world in private collections and museums.

Barone Pennisi will be exhibiting his collection of collages which represent refined and pure simplicity in a myriad of colours.

The Mistral Presents
The Diamond Of The Table – The White Truffle
In October, InterContinental Grand Stanford Hong Kong’s award-winning Italian restaurant The Mistral will present a special menu featuring Alba white truffles – the most sought-after culinary delicacy from Italy.

The white truffle is unique to Piedmont. With its irregular, round shape, white truffles have smooth, grey-brown surface with delicate aroma. When cut open the flesh displays a brown tint similar to that of hazelnuts, marbled with whitish streaks. White truffles are best savoured when they are sliced very thin and strewn over risotto, pasta or scrambled eggs.

Known as the "daughter of lightning" among ancient Greeks and Romans, white truffles received high esteem for their aphrodisiac properties. Famous Italian composer Rossini, also a renowned gourmand, called the truffle "the Mozart of mushrooms." White truffles, now universally called the "diamond of the table," are said to enliven the dinner of any person of good taste throughout the world.
